Bolenius Restaurant: THE ‘FLAGSHIP’ OF DUTCH CUISINE

Amid all the modern architecture of Zuidas, the polished style of Luc Kusters (chef) and Xavier Giesen’s (maître d’) restaurant has a refreshing and contemporary feel. With a coveted Michelin star, Bolenius Restaurant is the ‘flagship’ of Dutch Cuisine, serving modern creations prepared with local ingredients and a respect for tradition and nature.

DUTCH CUISINE

Bolenius Restaurant opened its doors in late 2010. Its menu features modern, healthy dishes made with local ingredients, in a style the owners like to call ‘Dutch Cuisine’. Their kitchen works with state-of-the-art techniques and an emphasis on vegetables and seasonal products, taking inspiration from all over the world and translating it into a minimalist cuisine. With this Dutch Cuisine gastronomy, the restaurant makes a delicious marriage between health and flavour, and demonstrates just how contemporary Holland’s traditional flavours can be.

VEGETABLE PATCH

Following the ‘eat local’ philosophy, Bolenius has its own vegetable and herb garden just outside the restaurant. A varied range of these home-grown vegetables and herbs are served daily. Co-owners Luc and Xavier secretly hope their urban garden has set an example for more sustainable and plant-based gastronomy.
